Roast Chicken breast + Veg. Used it to entertain women and they love it and always seem impressed.

Ingredients:

1x Butternut Squash
4x Potatoes
2x Leeks
1x Courgette
4x Carrots
1x Garlic
1x Red Onion
2x Chicken Thighs
1x Jar of Mixed Herbs

Method:

1. Peel and chop the Butternut Squash, Potatoes, and Carrots into similar size chunks. Put them into a roasting tray with a small amout of oil already in there (Virgin oil is best, but any will do)

2. Chop up the Courgette, Leeks and Onion and add to baking tray.

3. Take two cloves of the Garlic and press down on it until you hear it cracking upen. Don’t remove the skin or completely break the clove. Place one at either end of the baking tray.

4. Rub the chicken in some oil, and place on top of the Vegetables in the baking tray.

5. Sprinkle over the veg and Chicken some Salt, Pepper and Mixed Herbs

6. Place in the oven at 200 - 250 Degrees C for about 45 minutes to an hour. (This depends on your oven. Mines a **** Electric one so it takes a long time.) When it’s done, the Chicken and Veg will be nicely browned.
