Pasta + Pesto for LIFE! Can never go wrong!


Oh, and Baked Beans and Pasta; even easier to make!
 
Don't buy ready made tomato sauces. Onions, garlic, tinned tomatoes and fresh basil is far nicer and quick and easy. This can probably be improved upon massively since im no pro chef, but i use it as a quick tomato sauce base for spag bol, lasagne etc.
 
Really quick pasta and yummy All from Asda.

1 Pack of Spicey Sausage Tortellini
1 Tub of Arrabattia Sauce
1 Matthesons Spicey Smoked Sausage

1 Chibbata Garlic Bread

Before starting if your chibbata takes 10-12 minutes put it in the oven and start the steps bellow half way threw.

1. Unpack all ingrediants and fill a pan of water and bring to the boil.
2. Just as that is boiling add your sauce to another pan and put it on a low heat as this takes 5 minutes the pasta about the same
3. add your pasta to the boiling water and while thats coming back to the boil cut the sausage into slices ( all of it )
4. As your pasta reaches boiling reduce it to simmer and leave it for 3 minutes. While this is simmering stir your sauce and add the sausage.

once the pastas 3 minutes is done and your sauce hot, drain pasta and put it back in the pan add sauce and sausage mix heat it up for about 1 minute quickly and serve with the garlic bread which has just been ready.

Terrible spelling but im typing between calls. its easier than I wrote but damn its lovely.
 
Tin of Tuna in sunflower oil
Crushed glove of garlic (or paste, or chopped garlic in vinegar)
Onion
Frussli pasta
Cheese
Tin of chopped tomatoes with herbs

Put pasta into boiling water, cook for 15 mins.

Open tin of tuna, poor a drop out in a sauce pan and fry off the garlic and onions.

Drain rest of the oil, and add the tuna to the saucepan, fry off again.

Add 3/4 tin of chopped tomatoes, simmer some of the juice off.

Once pasta has cooked, drain off and wash off the starch.

Add to the saucepan of sauce and mix in. Place mixture into a baking dish, add grated cheese on top and place in oven until cheese has melted.
 
Pasta with Pancetta & Garlic:

Put diced pancetta (bacon lardons will do at a push) in a bowl with some finely chopped garlic (minimum one large clove per person) and a good slug of decent olive oil. Leave to sit for at least an hour, preferably more.

Heat the oven to 250C

Boil pasta as per instructions, I prefer linguine for this but tagliatelli or spaghetti are fine.

Put the pancetta, garlic & oil into a baking tray and roast for ~5 mins until the pancetta is cooked but not burned.

Drain the pasta, toss through the pancetta mix and top with fresh parmesan if desired.

Do not attempt human contact for at least 48 hours after :)
 
I won't type this out but here is a rink to a lovely lasagne. Don't be put off by the leaving for 3hrs too cook bit, the end result is well worth it. I suggest preparing early if you are gonna do the dish cos the 3hrs cook time ;)

Make some home made fresh pesto, you can then add this to chicken + pasta. I prefer it over bought stuff and isn't too difficult to make.

Tuna Pasta
Tuna
Chopped spring onion/red onion
White wine vinegar
Salad creme
Pasta

Can be eaten warm or cold.

Fresh tomato + chicken
Fresh tomatoes
Chicken
Onion + Garlic
Basil
Optional: Chili/Tabasco

Fry onion + garlic
Add chicken until cooked
Remove chicken.
Cut tomatoes and place them in pan on a medium heat so they reduce down to form a sauce.
Add salt+pepper and basil to taste.
Slice chicken to strips and add back to the tomatoes, heat through.
Add to pasta.

Kind of made the tomato one up but I had a similar thing this weekend just I didn't cook it but that is the basic idea.

Can both be done without any oil or fat to keep it healthy (not the homemade pesto though).
 
My Carbonara recipe

mix egg yolks with freshly grated parmesan, fry up some small bacon strips, drop of white whine, boil up some spaghetti, toss it in (keep half a cup of the spaghetti water) add the egg/parmesan mix, stir it in , pour in the spaghetti water and mix it in, serve with garlic bread

uv's awesome vodka pasta

ingredients:


100g pasta - tricolor for a nice colour
pine nuts - a handful
half an onion
three shitake mushrooms
half a courgette
a leek
cream cheese (boursin works great, but philly works too)
one garlic
two shots of vodka (ouzo/raki will also work, if you'd like an aniseed flavour)
seasoning: I like to use onion seeds and mustard seeds

The cooking:
Chuck the pasta on to cook, it'll take ~12 minutes.
Chop the leek, onion, courgette and mushrooms, and whack 'em in a pan with the pine nuts.
Crush the garlic, and mix it with the vodka and cream cheese, and stick in with the veg once the courgette starts to catch.
Drain the pasta, stick it in the veg/souce pan, add your seasoning. If you're using onion or mustard seeds, these need to be added at the beginning.

Serve and enjoy with some crusty tiger bread.

Add a good splash of balsamic vinegar to any of the basic tomato sauces above (preferably at the onion/garlic stage to drive off the acetic acid) for a deeper, more complex flavour :)
 
As per thread title, I've been away from home for 2 months I'm doing well, I cook most of my meals (surprisingly enjoying it) and I'm training hard :D

I haven't cooked pasta on my own properly. Before I do I'd like to see what recipes you guys recommend. I'd like to incorporate tuna + chicken into most recipes. I'd most likely be using wholemeal pasta.

heres what i usually have in my pasta

salmon cuttings
peppers
bannana or carrots
some pesto (whatever flavour u like)

and maybe a little bit of pineapple or apple
 
Chorizo Bake
Serves 4 (about 750 calories)
300grams pasta (I use penne)
225grams Spanish Chorizo
1 large onion
6 or so mushrooms
heaped tablespoon of whole grain mustard
250gram tub of low fat Mascarpone
50grams cheddar

cook the pasta and set aside.
In a pan fry the cubed chorizo of when the oil starts to come out, throw the onions and mushrooms in. When the onion has softened remove from heat and stir in the Mascarpone and mustard. Mix in the pasta and place in a pyrex dish. Grate the cheddar over and bake in the oven for 15-20mins at around 180 until golden brown.
