Sports 600s have 3 big drawbacks for new riders- and if you've just passed DAS and have no 125 history you can barely ride a bike... First is that they're very, very powerful- people with no bike background think a 600 is going to be slow, yeah right. Sure, you can be sensible but it doesn't take much of an error to spin up the back wheel and crash, or to catapult yourself into the side of a car, or similiar. Top speed isn't the issue, since even an SV650 can do 130, but 600 power can get you in trouble very fast.
Second is the brakes... They all have phenomenal brakes these days. And a new rider has no braking ability. The panic "grab a handful" reaction can get even very experienced riders but it's much worse for a noob, and with these brakes you just can't do that.
Third, is the cost- most people will drop their bike in some way in the first year, whether it's a real crash or a car park drop off the sidestand. And a CBR600RR is a very expensive bike to drop.
My advice isn't exactly unique, but... Honda Hornet, Suzuki SV650, or older CBR600F. All 3 bikes are FAR better than you will be, even once you get some miles under you, fast enough to scare you senseless, but more forgiving, and cheap and tough. The SV in particular is almost unkillable, trust me I tried. And very, very few people have the capacity to outride these bikes capabilities on the road without taking stupid risks.
