Games that stand the test of time.

Enemy Territory.

Graphics are dated now, but you can run it at full res with absolutely everything on, and the gameplay remains as addictive as ever.
 
Depends on what you count as 'old' really... the ones I come back to most are Dungeon Keeper and DK2, Unreal and UT, and Morrowind.
 
UFO : Enemy Unknown. Late eighties I think, and I can still play that game for hours on end. Technologically it's a dinosaur, but still has some the best gameplay I've ever seen in a game.

Lords of Midnight - it's actually the windows remake of this that I play, but it's basically the same game with a lick of paint. Again, I can still play this for hours on end, no two games ever turn out the same. That was '82 I think, 25 years old.
 
Would definitely agree with the Warcraft 3 suggestion. A good tower defence map is fiendishly addictive.
 
Some good classics there, Angband/roguelikes, Rebelstar/LaserSquad/X-com series, Diablo, etc

Surprised no-ones mentioned Civilization. I can still play Civ 4 for hours on end!
