How to cook?

I have just been to my local butchers a nice french trimmed rack of lamb caught my eye.

Ive just got home and im scratching my head a little what is the best way to cook this?

I have seen them put foil around the ends of the cutlets to stop the burning?
do i need to brown the meat first in a frying pan then put under oven?

Its a 5 bone rack enought for two of us so cooking times would be handy if anyone has them also.

Looked on BBC Food not much luck
 
I would personally fry it in a pan, or boil it. I would not recommend it though as I have not done it personally :)

So what I say may be totally wrong!
 
Could do all sorts of things with it. A couple of suggestions

1) Chop some onions, carrots, etc bung in a casserole dish. Seal the lamb in a pan quickly, then put in with the vegetables, cover with gravy, add some mint, put in the oven for however long and hoorah, lovely lamb casserole

2) Cut into portions. Pan fry some finely chopped onions till they're golden brown and soft. Remove from pan. pan fry the portioned lamb in the same pan, add a splash of wine or sherry or something once the meat is sealed. Don't over cook it, leave it a little pink inside. Make up some stock from an oxo cube, etc, don't make too much. add to the frying pan along with the onions reduce til its thick and yummy. Add some herbs if you so desire. Serve with whatever veg you have

yeah if it's decent lamb don't mess around too much with it just roast it, or chop it into smaller cutlets and grill them. i love lamb it's my favourite meat :)
 
Shame it's so ****ing expensive in the UK :(

Back in Cyprus, we managed 1.5kg of freshly minced lamb for less than £11 - very high quality, delicious lamb.
 
boiling things on the bone is a well known technique that various chefs recommend as it give the whole meat falling off the bone thing. I wouldnt say it would be the best for something like this though, best for BBQs when marinate is being hammered

Back in Cyprus, we managed 1.5kg of freshly minced lamb for less than £11 - very high quality, delicious lamb.

I bought 2 KG from my local butcher 2 weeks ago for £14 and it was carved off the lamb carcus and minced while I waited and very high quality

So cheaper and the butcher has one of the best reputations in Somerset for producing high quality locally sourced meat
