/edit. These require petrol and if you forget you wallet and drive too far, you do end up on the hard shoulder of the a19 waiting for the wife to come along with the petrol can of rescue. Not that that is where I am posting from now of course...

Another vote for Mk1 MR2 here. Lots of fun, easy to fix, cheap to pick up a driveable one.

Yes, a mk1 mx5 has fairly soft suspension when new, 20 years on it will probably need changing.

Something RWD, start as you mean to carry on. MX5 would be my call, good starting point and can do quite a lot with it.
