Will a 4870 X2 2GB Outperform a 4870 1GB on a NONE Crossfire enabled game?

So, my quandry is this:

I play a varied assortment of games, some racing, some sport, some FPS, some Simulation.

Now, not all of them support Crossfire/SLI.

Bearing this in mind, I have the following questions:

1.
Will a 4870 X2 2GB outperform a 4870 1GB with a none Crossfire enabled game or will it run slower or the same?

2.
I thought initially, the beauty of Crossfire was that any game could be enabled owing to the way it rendered the image, is this not the case?

Any problems running Crossfire with dual screens off both DVI ports?

I am looking to potentially run a Matrox Triplehead 2 GO across 3 screens, would the 4870 X2 2GB give any help with this on NONE crossfire enabled games?

Also, would this PSU be acceptable for either card a I am currently running the OEM one which came in my case.

the x2 is not really running in crossfire mode though ... is it ? (im a newb when it comes to xfire)
so a guess would be it should run faster than a single core 4870

i would like to know this myself for the future
 
From further research, it looks like the GTX280 would be better in none Crossfire games but I am loathed to have to go anywhere near Nvidia drivers.
 
Its warhead which at the time didnt make use of the 2nd card which i guess slowed down the first. Not to worry as theres loads of games that do that are actually good and not just hyped up like crysis/warhead.
 
In regards to your matrox question - I wouldnt put a dual head/triple head anywhere near a performance/gaming rig myself

the matrox add-ons are ok for 2d work, and for analysts (who I work with on a daily basis) but for games I wouldnt put anything else in the chain between your actual graphics card and the monitors (some use a usb connection, which may be ok, but I would still tend to add a seperate graphics card internally to run any additional monitors required unless you are really non-technical)
