The emphasis here is on 'cooking'. Sandwiches, baked beans and all that stuff don't count.
Sometimes - like now - I find myself with hardly anything in my cupboards and can count my ingredients on one hand. So here is one idea for a meal I just made that went surprisingly well.
Spicy chickpea risotto
Ingredients:
Half cup of rice [and when I say cup, I literally mean a mug].
1 tin chickpeas
1 tsp mild chili powder
2 tbsp Olive oil
2 tbsp Swiss Vegetable Bouillon powder
Tabasco [optional]
Fill a pan with 3.5 cups of water, bring to a boil and add the Bouillon and rice. When the rice is plumped up but not totally cooked through, heat the olive oil in a frying pan and add the chickpeas and chili powder. Sautee the chickpeas on a low heat in the oil for roughly five minutes or until the rice is cooked and the water has totally reduced. Transfer the rice to the frying pan without draining.
Serve and add Tabasco to taste. This should make two decent sized bowls.
