If I had to pick 1... Quake 3 multiplayer is the best fps experience I've had.

Think Goldeneye, Perfect Dark and Halo are the ones which I got really immersed in.
On PC probably Half Life and Cod4.

PC: Doom 3 or Crysis/Warhead, D3 was such a well designed game that had wicked weapons, effects and was pretty simply to pickup and play.

Console: Maybe Red Faction II, enjoyed that a lot and not so sure why
