Wind up torches are useful. Good when camping. Good in a prolonged power cut. Good to keep in a car and not have to worry about replacing batteries.

the bridge will not affect the voltage.
you really need a multimeter though, voltage regulators usually need a minimum input voltage to work and you need to know how much the dynamo is capable of outputting.
