Hi all,

Looking for a recipe for salmon that I can cook on valentines.

Also, what other fish could I try? I've not really tried many fish, but have tried and like kippers (except the bones) and salmon and sea bass.

Anything to look for when I buy my salmon?

Go for Wild Alaskan Salmon - it will be a deep deep red and not luminous orange like farmed salmon that has dye added to its feed, or pale like "organic" (but still farmed salmon).

Salmon fillets, new potatoes, aspargus spears and hollondaise sauce should be easy yet impressive. :)

I usually pan fry my salmon fillets in a little bit of olive oil. Skin down to start with, and cook it like you'd cook a steak (just a couple of minutes either side). Buy the fish the same day as you want to cook it.
 
Try doing a salmon Teriaki (sigh I can't even spell it right).

Or you could:

Marinade the salmon in soya sauce, garlic, bit of oil (not much), squeeze of lemon. To that you could (I'm trying this tomorrow btw) add a bit of honey and chilli.

I can let you know how my experiment goes if you like :)

Or you could do some kind of spiced salmon can't remember how it's done now unfortunately (sorry:()

Try doing some fishcakes for starter? Easy to make and can be delicious. Just about any online recipe from your chef of choice will do and be easy to follow (trust me).

Fish curry?

Salmon is good fried in olive oil and butter add a little salt and pepper. I'd do a cheesy mash with chopped chives, asparagus and a holandaise sauce.

Hollandaise

2 egg yolks
1 tsp of fresh lemon juice
4-5oz butter in cubes
I'll maybe add salt, pepper and a pinch of mustard powder too.

Place a bowl over a simmering pan, don't let it get too feisty and don't let the water touch the bowl.

Drop in the eggs and the lemon juice

Whisk for a few seconds til it starts to go creamy then add the butter a few blocks at a time till its all mixed in.
 
You could also oven cook the salmon. Slice a lemon and place some of the slices on a backing tray then lay the salmon on top and cover with the remaining slices. Keeps the salmon nice and moist adn lemon is great with salmon :)
 
Thai style fish/crab cakes?
Fish pie! sounds crap but ooooh so tasty when done right.
Fish Sushi bits and pieces?
I love green thai curry with nice big prawns

Monkfish is probably my favourite fish, really nice firm fish, don't really know any recipes for it though...
 
If you want something quick simple and tasty for two try this:

2 white fish fillets (Hadock or Cod or Something similar)
50G White Bread Crumbs
The leaves from a couple of sprigs of Thyme
Zest of half a lemon.
Splash of olive oil

Mix the the crumbs, the zest and the thyme in a bowl add enough of the oil just to stick it together.

Lightly oil a baking sheet and place the fillets skin side down onto it

Spread the mixture over the fish

Bake in a 200 C oven until the breadcrumbs are crispy and the fish cooked (8-10 mins)

Serve with creamy mash and asparagus.
 
Grilled salmon topped with a thick layer of sweet chilli sauce and plenty of cracked black pepper is a winner.

Pan seared tuna steaks with a little oil and lots of seasoning too. Cook like steak however rare you like so its easy.

Monkfish is probably my favourite fish, really nice firm fish, don't really know any recipes for it though...

Shame it causes immense environmental damage dredging it up.
