I think it stops them getting destroyed by steam or soaked through with vinegar. It's also a mental thing where it may bring back memories from childhood.

my thoughts exactly, needed to be proper caramel and slightly more of a wafer/caramel weighting (1-2 more strips of wafer and minus the equivalent in 'caramel')
