Cookies: give me your best recipe

I want to make some biscuits or cookies tomorrow.

Please provide me with a recipe for them* :)



*Preferably that you have used yourself and enjoyed

I've made this a few times - It rocks!

I usually sub 20% of the flour with cocoa, and split the brown sugar 50/50 with dark muscavado and light brown sugar. And make sure the butter is actually melted (not just soft) when adding the sugar and stuff, you want a kind of runny paste consistancy before adding the flour.

For the chocolate chips I have had good results with just cutting up 99% Lindt into small <5mm squares, as these cookies are really sweet, it works well.

Cooking time is quite important, This makes about 18 -20 for me, and I cook 6 at a time, so try slightly different times to get the setting for your oven.

Using silicon mat as well is essential. Lidl sell it for about 2.99 every so often or Tesco probably sell it these days.

My cookie recipe:

1. Drive down to Sainsbury's.
2. Put Maryland Cookies in basket.
3. Pay for cookies.
4. Drive home.
5. Eat cookies.
 
If you want the best cookies you need to leave the dough in the fridge for 24 hours before baking them.
They get a much better consistency that way
 
How do you ignore people again?

edit: Secretspy did you just put the strawberries in fresh? How did you get them to dry out?
I'm thinking of doing a multi-chocolate chip as most cookies seem to be made from the same ingredients so I'll just mess around with the fillings so to speak
