Got some chicken that needs eating 1-2 good sized breasts, not got a lot in willing to go and buy anything to make a nice meal out of it.

Maximum of 3 or 4 quid for some other stuff to go with it gonna pop to sainsburys.

If nothing good comes out of this thread im just gonna chuck it in another stirfry.
 
Buy a jar of jalapenos, slit the breasts down the middle and stuff them. Layer a bit of decent cheese on the top.

Cook.

Serve on a bed of cous cous/sauteed potatoes.
 
peanut sauce + noodles

forget the recipe for the peanut sauce but the main ingredient was peanut butter :p

this.

Make a paste out of
garlic, ginger. chilli powder, soya sauce and lemon juice and marinade the chicken in it.

Satay sauce
3 tablespoons crunchy peanut butter
1 cup water
2-3" cube of creamed coconut
2 finely diced fresh chillis (or to taste, can also use lazy chilli)
1 tablespoon of lemon/lime juice (depends what hint of flavour you like)

Throw it all in a saucepan and bring to the boil. add more water if it to thick. Or peanut butter if to thin

Stir fry the the chicken with some courgettes and baby sweet corn

Serve with egg noodles

Possibly, possibly! I usually just use some nice mature cheddar. One of my favourite (and easiest) dishes.

If you go the cous cous route, grab some lime juice and add it to the water as well as some herbs (your choice). If the sauteed potatoes route, a decent helping of pepper and bay leaves.

eggs, morrisons stir fry mix (the one with loads of bean sprouts) chicken stock, peppers, corn flour

1 egg yoke no white , place in bowl add 3 teaspoons of flour , mix.
add diced chicken and coat(known as velveting)
shallow fry in wok for 8 mins, remove.
fry the peppers add the beansprout mix, then the chicken , add stock..profit!
add noodles if you wish :)
