It's my mother-in-laws birthday soon and I have found a picture that she likes on somebody's gallery, which is great BTW! (http://gallery.moeding.net/).
He has very kindly provided me with the JPG at high resolution (3456x2304px) but I would like to put it onto an 80x53cm canvas, would this be high enough resolution?

A lower resolution image is on this page and is titled Cueva de los verdes. What changes would you make to the picture? I was looking to reduce the blown areas a bit somehow and sharpen it too, not sure what else I should do before getting it printed.

TIA

for canvas the minimum you should aim for is 100dpi. this would be 34in x 23 in for that resolution (you need to convert that to cm)

The resolution of your photo is a bit low if your looking to get it blown up to that size.
A 80cm x53cm at 300dpi works out as 9449x6260 pixels

At 150 dpi this 4724x3130 pixels which is relatively close to the resolution of your photo, 150dpi prints are still pretty good, just sharpen your photo a tad and it will look fine.
