Vegetarian recipe needed.

Hi guys.
My misses is a vegetarian, and id like to cook something nice this evening.
Can anyone give me or direct me towards a nice veggie recipe, as im bored of making simple things like quorn spagbol, etc etc.

I can cook a mean eggplant parmesan. Easy to cook and very good/filling for meat eating peeps like me. Look into it on google.
 
I recommend a sweet pepper stuffed with risotto.

I would just add a few chopped fresh veg to the risotto as it cooks. Peas and courgette give it a nice look.

Once you've made the risotto stuff it into some halved sweet peppers. Best to give them 10-15 mins in a hot oven first to soften a little. Then cook until risotto browns off a little. Serve it with a side salad.
 
Awesome but all risottos have a tendency to be mushy. As long as you are aware of this and careful of it it's a great choice.
 
Lots of things you can do.

Pastry parcels stuffed with cheese and veg (sun-dried tomatoes, sundried peppers and a bit of basil is a good combo). Great served like a roast or with a side salad.

Mushooms and cream go so well together. Be it mushroom strongronoff. Or a mushroom cream and white wine sauce on pasta, gnochi or in a risotto.

aubergines are fabulous. They can be turned into a layered pasta bake, used in a spag bol type dish. Stuffed or bread coated and fried served with a dip as a starter.

Things like a good cheese pie or vegetable pie with mash and mushy peas.

Or far eastern. Been curd curry is heavenly.
Or as some one else above, Indian currys.

Vegetarian lasagne is great.
Make a spag boll out of aubergine to replace the meat. Layer up. Sauce > spinach > grilled thinly sliced butternut sqaush > pasta > cheese sauce. repaeat several times.
