OcUK chefs spec me a lamb's kidney dish

Devilled Kidneys on toast!

Ingredients

4 lambs' kidneys, skins and white core removed
milk, for soaking (optional)
4 tbsp plain flour
1 tbsp salt
1 tsp paprika
25g/1oz butter
½ tbsp Worcestershire sauce
150ml/5¼fl oz vegetable stock
2 tsp Dijon mustard
hot buttered toast, to serve
Method

1. If you do not want your kidneys to taste too strong, soak them in a bowl of milk for 30 minutes, then drain.
2. To prevent the kidneys from curling up when cooking, soak in a bowl of hot water for 2-3 minutes, then rinse with cold water to refresh.
3. Mix the flour, salt and paprika together in a bowl and use to dust the prepared kidneys.
4. Melt the butter in a small frying pan and fry the kidneys over a low heat for 2-3 minutes on each side, or until golden-brown all over but still slightly pink inside.
5. Drizzle the Worcestershire sauce and vegetable stock around the kidneys and simmer until the liquid reduces slightly and the kidneys are cooked through.
6. Pile the kidneys onto hot buttered toast and serve immediately.
 
Well I've decided to go for a steak and kidney pie, I'll pick up some of the ingredients on the way home. Pastry is not something I've done before though so that'll be a first, the bbc recipe describes it as follows

8. Roll out the pastry on a floured surface to 5mm/¼in thick and 2.5cm/1in wider than a 1.2 Litre/2 pint pie dish. Cut out the lid so it is slightly bigger than the dish. Cut a strip of pastry the width of the rim. Stir the parsley in to the meat and transfer to the dish.

9. Brush the rim with egg, lay pastry strip on top and seal. Brush with egg and put lid on top. Seal the edges, knock them up with the back of a knife. Flute the edge. Cut a slit in the lid, brush with the egg (but not the edges or they won't rise).

These bits I'm having difficulty imagining, can anyone elaborate?
 
Sounds like it's asking you to put a pastry rim around he dish. Then putting the lid onto this pastry lid.
Can't say I have ever done that.


Go for a pudding as well, instead of a pie..

Sorry can't help I like them in things. Faggots, Haggis, steak and kidney pie. But find they have to strong a taste on their own.

Hey if you like to eat an organ whos sole function is to take the impurities out of blood and make **** then dont roll eyes at me :p

But I bet you would have the same disgust with the heart or other cheap muscle cuts.

Nothing wrong with impurities, they aren't diseases and all parts of animals will have impurities in.
 
Nowt wrong with kidneys, but if we're talking Offal then give me Calves Liver or Sweetbreads any day. Calves Liver is cheap for what you get too.
 
Read this but don't say I didn't warn you :D

Oh I've cooked with kidneys before so I know how gooey they are. Forgot my wallet yesterday so had to make something a bit random, but I seem to have a good idea of what goes with what so it turned out really nice :)

This is what I think I did

1*large onion finely chopped
3*large garlic cloves crushed
3*small green chillies chopped with seeds
1*tin chopped tomatoes
??? natural yoghurt, small pot
1/2 teaspoon paprika
beef kidneys (wasn't lamb like I thought)

1. Chop up the onion and the chillies
2. Heat up a sauce pan and melt a generous amount of butter in it.
3. When melted chuck the onion, garlic and chillies into the sauce pan and stir for a minute or so, then turn down the heat and place the lid on the saucepan and sweat the contents for 5-10 minutes
4. Meanwhile prepare the kidneys and brown in a frying pan.
5. Once the onions look a nice golden brown and are really soft add the tin of chopped tomatoes and yoghurt, mix in and turn up the heat to burn off some of the liquid from the tomatoes.
6. Once you have a thick sauce turn the heat to the frying pan back on and add the sauce to it, simmer for a further 2-3 minutes and then serve with an accompanient of your choice.

Today I shall be having the left overs for lunch with some nice crusty bread
