A supermodel is meant to be striking looking, as Nimzicki says they're more or less a mobile tailors dummy. They're distinctive and that is why they tend to be supermodels rather than 'just' another model, there are (and probably always will be) a few who are what you might call conventionally beautiful but many supermodels have a distinguishing quirk or two. The French expression jolie-laide comes to mind here, quite simply while they might not fit with traditional ideas of perfection there is something about them that makes them attractive, they just suit their features.
I don't find Lily Cole particularly attractive but she fits with my definition of a supermodel so I can easily see why she is.
