Well, it depends if its oven cooked and for how long. If its done right in an oven it will fall apart as soon as you insert the fork.

Got to use a steak knife, gives the meat a nicer cut. And has to be either med rare/rare for my steaks

I use a straight edged small sharp knife. I prefer not to use a serrated edge with steak.

No steak should 'fall apart'. It should melt in your mouth but at least hold it's shape.

I tend to use my paring knife to save on washing up.
