Lastly there was a game that had living spaceships, when you destroyed another you could absorb parts which would make your own ship grow visually and in terms of functions, cant remember the name though.. was a recent one.

Freespace 2 with the latest mod (there's one big one that re-does textures etc).
Still looks great.
Edit - I see Mac has found the thread on it. Best atmosphere in a space game ever.
Freespace 2: Simply awesome. Buy this and get modding.
Freelancer: OK but a bit repetitive, trading in particular is underdeveloped.
Darkstar One: Not a bad little jaunt although the dogfighting isn't quite up to scratch, often you just end up circling your opponent endlessly. The buddy combat is great though (AI controlled characters helping you out).
