A good stir-fry?

I'm looking for recommendations for a good stir-fry, links to recipes would be cool, or your own of course.

Typically I'd do something along the lines of a king prawn or cray fish with soy sauce, beansprouts, noodles, mushroom, peppers, onion and a random pre-packed sauce.

Too bland? I have in the past rolled the fish in some paprika to add some kick but not sure I want to do that tonight - cooking for a lady who doesn't like too much heat in her food.

It doesn't have to be authentic but I'd rather it be light and crisp on the palette, not gloopey and thick.
 
I tend to get some chichken thighs, chinese stir-fry sauce, some peppers, a pack of stir-fry veg (beensprouts, cabbage etc.) and some egg noodles from Sainsburys!

Cost around about £10 and can feed up to 4 people. Easy to cook and very filling :)
 
That's the beuty of stir-fry though, there isn't really a right and wrong :)

I guess you're right, I just thought I was being bland but it would seem from my searches that most recipes are a similar process.
 
There's one on the Sainsburys website i use, 'Beef Stir-Fry' it's called, it's gorgeous.
 
Thai Style Beef Stir fry.

Cut some reasonably decent steak into strips, season with salt and pepper and toss in some sesame oil for a few minutes.

Stir fry the beey until nicely browned, not cooked through, then put aside in a bowl.

add a chopped red chilli, a chopped clove of garlic and a chopped lump of ginger to the wok, cook for a couple of minutes.

Throw in a chopped carrot and some chestnut mushrooms, cook for a couple more minutes, add some asparagus and mange tout cook for a couple more minutes.

Chuck the meat back in then add some soy sauce and some oyster sauce, cook for a minute or two more finally chuck in some spring onions and server with rice.
 
I always cook pretty much the same one - it's quick, easy, tasty, and my gf's favourite meal since the first night i ever cooked for her!

No premade sauces required....

  • 1 pack of mixed veg from Tesco (baby carrots, french beans, sugar snap peas, baby sweetcorn) - or your choice of veg - add spring onions, their always good :)
  • about 350g of raw peeled king prawns
  • 1 medium-hot red chili
  • chunk of fresh ginger, a touch bigger than a golf ball
  • 2 packs of sharwoods ready to wok medium egg noodles
  • dark soy sauce
  • vegetable oil
  • toasted sesame oil

First of all, cut up all the veg into matchsticks (ie 1.5" long strips)
Do the same with the ginger and chili (the amount in the recipe won't be too hot - my gf doesn't like really hot food, but the coarser your chop the chili and ginger, the less hot it will be)
Chop the prawns into halves.

Heat equal amounts of veg oil and sesame oil in the wok (about a tablespoon of each), then put in half the ginger and chili, fry for a few seconds and add the prawns. When they have just about all turned pink add the rest of the ginger and chili, then add the veg straight after. (Don't cook the prawns to long as they dry out and aren't as succulent). Stirfry this lot for about 3 or 4 minutes, drizzling a little more sesame oil over it, and add a healthy dose of soy sauce towards the end. Transfer to a large bowl for a moment.

Next put some more oil in the wok, heat it up, and add 3 or 4 packs of noodles (you get 2 packs in each packet that you buy). You need to keep these moving or they stick to the wok. Cook for a couple of minutes and add soy sauce, then serve onto 2 plates. Chuck the prawns and veg back in the wok to reheat slightly - they're not really cold, but i like them to be sizzling as i shovel them on top of the noodles :)

And voila! The tastiest Thai style stirfry ever imgfo (in my girlfriend's opinion) ;)

Once everything is chopped it takes about 10 minutes if that to cook so you could prepare it all and keep in the fridge, then it's ready to go when you want to eat!

This is a light and crispy stirfry - the veg are just slightly softened and still crunchy - mmmm

Looks like I have a few to try out - thanks guys. :D

Is it true to improve the none stick qualities of a wok you burn olive oil in it at a high temp and then allow to cool?
