I keep my bread laid out slice by slice on a thin tray in the gap between the fridge and the floor.
Bread, eggs, mayo, ketchup None should be found in the fridge.
Or just don't eat bread, simples. Fresh bread goes off within 24hrs anyway, all mass produced breads have preservatives and other regulators/emulsifiers and acidit regulators and what not mixed into it's inferior flour/dough anyway.
if anything it should become dry like if you put a sponge birthday cake in the fridge all the moisure will be sucked out of it because well thats what modern fridges doIf bread in your fridge is going stodgy then you are doing it wrong as I've never had that issue ...

So what if the bread is cold ... during the week I either have it as toast or for lunch at work which means it's warmed up by then.
