Does anyone else use tongs to crisp up the fat on edges?
So as to not overcook the bacon (and turn it hard), I fry, then use tongs to pick it and hold the edges in the hot oil. Then a quick drain on kitchen paper.
Soft tender bacon, crunchy crispy bits on the edge. Beautiful in a thick sandwich.
