will a 1920x1080 + 1920x1200 monitors work as 1 big res?

You mean extended desktop in windows or to game across both?
I'm sure you will need to drop the 1920x1200 to x1080 to keep everything in proportion but then the x1200 wont look right, personally I wouldn't bother for gaming but extended desktop will work fine but not acting as 1 big display...

They would if you have them portrait, as they would be 1920x2280.
