Is having a 1.25v overclock with my core clock at 1ghz and mem at 1300mhz too much for a gaming profile (I do game a lot :D). My temps reach about 75 with fan on 40% and my VDDC temps hit about 75*. Is that a bit high or would it be ok for gaming? cheers

That'll be fine.

Graphics cards can run at higher temperatures than CPUs. Personally I wouldn't worry about the cards temperature until 90, and even then I imagine it would still be fine running hotter.

I myself would still keep it a little cooler but that is personal preferance.

core temp is fine to about 95c but the VRM's i would keep under 70-80c

Try the furmark benchmark and see how hot your vddc's get. Much over 100C on those is prolly not a good idea for 24/7 use.

Then again, nothing heats up gpus and vddc more than furmark, so you could use that as your worst case senario.

Run Milkyway for a few hours and it will heat it up good and proper but it'll be gpu load only, memory is not taxed.

Overall I don't think that the temperatures are your issue, it's your vgpu. 1.25V with 100% load 24/7 *will* seriously shorten the lifespan of your card but if it's just for a few hours of gaming a day and your remember to switch back your voltages then you should be ok.
