THREE NEW SAPPHIRE 5850 CARDS ARRIVING 12/04/2010

I have a 1GB 5850 and play BC2 at 1920x1200 with 4xaa an no issues. 1gb might be an issue with higher res and eyefinity, but for single 1920x setup, it should be fine
 
Are these 2GB boards the same as the 1GB but just with double the RAM on each chip? I would like to replace my 1GBs at some point and already have waterblocks...

I would say not no, they look to have a completely different PCB, that limits voltage tweaking and higher overclocks. But afaik, they run at a slightly higher voltage than stock.

I had a pcs+ 5850 and had to swap with a friend for a HIS reference 5850 for voltage tweaking and being 100% certain and EK blocks will fit it.
