Home made spicy potato wedges?

Has anyone got a good proven recipe for these?

I tried to do some the other day, using vegetable oil (does it make any difference?), but they didn't really brown in the oven. I've since found this recipe http://www.selfsufficientish.com/salsa.htm

And wondered if it looks good? Ideally want them to turn out like this:

I hate making coated potatoes. Though saying that I'm rubbish at cutting consistant sized shapes which I think is the key. :p

Mine usually end up slightly raw / brown before they're cooked all the way through, or they're over boiled and mush around in the mixing bowl.

I wash them, cut them, then stir them into a bit of groundnut oil in a bowl (oven temp is too high for olive oil). Then stir in whatever seasoning I fancy: Jamaican jerk, Cajun, nando's rubs, whatever.

put on baking tray and bake in really hot oven, turning occasionally for about 20 mins (depending on thickness)

Use red potatoes like desiree or roosters
 
Does sunflower oil just not work for these?

Been in an hour @220c and top shelf, and they still havent gone crisp :(

For potato wedges I've always half boiled unskinned potatoes. Then chop them in to 'wedges' and place them on a lightly oiled baking tray. Crumble over a spicy oxo cube or similar and stick them in the oven at about 200c for a bout 20-30mins or until crispy.

I havn't had any complaints... yet.
