It depends if you are going for really specialised positions. Less people apply and the best cv/app gets the interview. If you are going for something general hundreds of people can apply and they only have 20 jobs. When I was unemployed my advisor said that 4 years or so ago it was 1 job for every 6 applicants and that now it is more like 1 in 60.
I have had 2 interviews for the DWP, the first one was about 2 yrs ago, just after uni. They interview 500 people for 40 jobs throughout the northwest. The 2nd interview I had for them I was told they interview 3000 people over 2 weeks at the Aintree racecourse and the Holiday Inn. 3000 people for 60 jobs..... Safe to say I didnt get it.
I now work in the biochem labs for the NHS, and when I got the job the HR woman told me that they only accept the first 60 applications and then forget the rest. These apps are sorted and then people are interviewed. So if you are the best man for the job but your are app number 61 its tough. This seems like a ridiculous system but I bet it saves a fortune in not sifting through hundreds of apps and I bet they are not the only company that it.
Anyways, I was unemployed for ~7 months. 150 apps, 15 interviews and 3 offers. All offers came in the same week so I chose the NHS as it was more money and hours but further to travel.
