Recipe recommendations using chicken and peppers?

I've got some chicken breasts and bell peppers that need to be used up. Normally I'd make fajitas or spanish chicken but I'm getting bored of both. Any suggestions?
 
Make a sauce using Arrabiata sun dried tomatoes and cream.

If you have none of those and want to cook now, I apologise :p
 
If he has none of those and want's to cook now, it's stir fried chicken and peppers with whatever spices he has, hehe ;)

Or chicken stuffed with peppers. Or maybe peppers stuffed with chicken :P
 
You could cut the chicken into slices, season and fry in olive oil with an onion that's been quartered and sliced.
Slice the peppers into strips and add them to the frying pan along with a few cloves of sliced garlic.
Add a couple of tablespoons of balsamic vinegar and stir fry for 10 minutes.

Add a couple of extra spoons of balsamic near the end to give you a rich sauce. You can add some basil at the end too.

Serve it on plain basmati rice :)
 
Dice and cook the chicken with onion and garlic (if you have the ingrediants) and stuff it, preferably with cheese and maybe mushrooms, into the peppers.
 
Put it all in a blender with some milk and you will have a delicious milkshake! Well I haven't tried that combination before, but I can't see why it wouldn't be anything less than amazing. Let me know how it tastes.
 
Usually with those ingredients I'll just fry up the chicken in a little oil with Cajun seasoning. Once lightly browned, add the peppers (cut into strips) with diced onions and a little garlic. Stir fry for a few minutes with some more Cajun seasoning and a little Worcester Sauce. Serve on brown Basmati rice.

Scrumptious and healthy.
 
You could slice up the peppers into strips and roast for 20 minutes. Cut the chicken into chunks and fry up or cook with whatever spices and herbs you got, serve together with cous-cous.
