I went to mine for a knife (for work) and they told me they didnt have any in stock!

I can't help but wonder if they genuinely didn't have any or if they didn't think I should be trusted with one.

Definately, it's why I have 3!

2 years is nothing. Most decent knives will have a warranty longer than that.

Does it really have to have a beer bottle opener especially? If not Opinel knives are pretty good, very simple and elegant - if you really wanted you could use the metal capped end as you would a lighter to open a beer bottle.
