Anyone got a good recipe for pork schnitzels?

My mum's german and here recipe usually goes along the lines of:

1) Tenderise the pork until it's pretty flat
2) Prepare a bowl of breadcrumbs, parmesan cheese, salt, pepper and paprika (can add more flavouring/herbs if you like)
3) Beat an egg and dip the meat in this before coating in breadcrumb mixture.

Gently fry until cooked :)
