Spec me a steak

I would say, Rib-Eye, on the griddle, with salt, pepper, and a mild olive oil rubbed into the steat, pan fry it via the griddle determine taste, and then let it rest for 5 minutes, for me this is the trickiest part. I can never let it settle, I eat while it leaks juice!

I've actually tried their method, although sadly I dropped the thermometer in the pan and then it wouldn't work (you'd think a FOOD THERMOMETER would be waterproof wouldn't you?) so I had to give up and just do it rare in a pan as I usually do...

Your post makes me want to invest a proper homebrew thermometre, accurate reading for my home brew amd my steak. TBH, GREAT SUCCESS

A question I have. I have eaten steak I know that has been hung, however, I live in ventral London, and I'll admit, there is a Tesco Metro below me, and me and my flat mate treat this shop as a huge lada, if you know what I mean, and living in a hugely materialistic area of London (Canary Wharf, even though broadband speeds are 3rd world)

How would I find a local butchers where I could ask for cuts of meat that I want, rather accept the worst meat in the word, via tesco metro?

I mean I understand there isn't a 'store locater' for local butchers, but if anyone has experience, I'd appreciate a mention.

Rib Eye, Sirloin, T Bone, Rump, Fillet... all steak is good.

I'd advise against Fillet. Anything under medium is difficult to cook at home as you simply don't have the temperatures needed seal and cook the outside whilst heating the inside without cooking it. It's just too thick. Fillet is a cut best enjoyed as a treat, cooked in a proper kitchen.

Not saying its impossible, but if you dont cook yourself steak regularly.. avoid disappointment and get something with less mass. Fillet is a tricky one to pull off.

Google: butchers canary wharf? There are a few within 2-3 miles of you. Try them out yourself or ask around for recommendations.

the time has come people. Steak tonight. it is currently sat in the kitchen, warming to room temperature, as recommended by you lovely folk. I plan on having garlic and chilli mushrooms, a few curly fries and coleslaw on the side. oh yeah, its a rib-eye =D

Darn you was goign to go to the butcher yesterday to get a huge hunk of meat, but never got time.
 
Here's my favourite steak sandwich recipe for everyone (I had this at Toms Kitchen in Chelsea):

- Put some chunky chips on to, and whilst they're cooking..

- Cook your chosen cut of steak in your favourite way - I used a Rib Eye for this last night, but the original recipe had a fillet.

- When steak has finished, rest for 5 minutes and in the meantime..

- Cut a ciabatta lengthwise and toast lightly. Once done, rub a clove of garlic on it, and spread a generous helping of Red onion marmalade.

- Now slice the steak and place on the ciabatta, and top this with rocket and shaved parmasan.

- Finish with a light drizzle of quality balsamic

Gorgeous, amazing meal with some beautifully balanced flavours.

try melting a little bit of Monterey Jack over. Yum!
 
Ended up going to Gaucho Fri night with my business clients and i have to say it was pretty damn good the steaks there...my clients enjoyed it immensely but they did say they prefer good ole USDA grade beef:p..

All in all the whole meal was pretty decent...the steaks i found were very nice but tbh ive had better...was an expensive night though:eek::p

Jack O'Shea in Selfridges - it's a bit of a trip I know but worth visiting if you're around that way, considered one of the best butchers in Europe
 
Make sure its not Halal meat (unless you are Muslim) :p

No one sells halal beef ie sueprmarkets or butchers unless you go to a halal butcher and even then its near impossible to get;).

Wish supermarkets would stock halal beef/steaks as id love to fire up my BBQ at home and make some. Going to the halal butcher for steak isnt exactly cheap nor informative...last time i asked for some rib eye, i got the guy telling me rump is the best for steak....ermmm no just no.
