Hi I recently purchased an eVGA nForce 790i SLI *** and I need some good DDR3 memory to go with it.

As far as I know this board only does dual channel.

I've seen two OCZ reapers which look good,

One is a bundle with 2 sticks of 4GB which has CAS7 timings Link Here

and one is a bundle with 2 sticks of 2GB which has CAS6 timings Link Here.

I want to put 8GB of total. As far as I know having 4 sticks of RAM causes a less stable overclock compared to 2 sticks of RAM? I like the CAS6 timings but how much difference does it really make?

go with the 4gb sticks, you wont notice the difference unless your benching, but as you said its easier to set up with only 2 sticks for overclocking

You need to ensure you have the space for them to fi before you buy as they are tall :)

Ain't that the truth! Close to 7cm tall! Makes them the tallest RAM modules I've ever seen! And that's my early version... The heatsink section on top of the heat pipe on the later ones looks massive in comparison to mine, could even make it up to 8cm high off the board, so watch out if you have an uber wide cpu cooler
