Get the CAB on your side. If this all turns ugly, you'll want some support to make sure your job's safe - don't mess around when the steaks are so high.
I worked in a kitchen once where if anyone made mistakes the manager would just give refunds out
the refunds were then taken from the tips that were handed out monthly (people complained without problems imo as they knew they would eat for free)
the tip system worked where all tips were split 50/50 half front of house and half kitchen
the money was deducted from whatever half the problems were and sometimes this was £300 in a month
in my time there (about a year) i made zero mistakes the kitchen deductions were £2400
as there was only 5 people working in the kitchen full time (80% of the tips) i lost out on £160 beacuse of other retards
