The motherboard screen at startup disappears pretty quickly, it says to hold [TAB] for BIOS and POST SCREEN but it just comes up with a load of the same messages about booting (obviously because i've held tab it repeats the request, bringing up the multiple messages).

My Windows 7 installation halts as well because it can't find the CD/DVD drivers or something, even though the retail disk is in the drive and that's what it's reading from.

hit the del button for all its worth.

As stulid said. As soon as you power on start pressing the Del key , If you miss it you will need too reboot and try again

2.2 BIOS Setup Program in the manual confirms you press Del on your motherboard

Is it looking for a driver because it can't find anywhere to install Windows 7 , i.e. it can't see the HDD

First thing too check is if the HDD is detected in the BIOS , although a previous thread proved that doesn't always matter

After getting into the bios i can now see that my SATA HDD isn't being found. What might be the cause of this? Everything is plugged in.

yep, make sure the sata cable is connected correctly at both ends, make sure the sata power connection is pushed fully in.
