I've found one of the true keys to victory is anticipation. Seeing where your opponent can go, forcing him into a certain action and then swooping in. Don't charge in for the ball, instead, let him run for a bit, but remove his options. Manually mark players, make him think you're going one way and then switch. Lob the ball over. Don't be afraid to make the long passes. Pass back to your defenders if you have to. Formation is important - some formations depend on lots of short passes, some depend on attacking wing play, some simply require you to lob the ball to your forwards. It might be wise finding the right formation for you (the one you're most comfortable with) and then getting used to how it plays with the players you'll be using.
Yes, you will sometimes feel that you're surrounded by a million players, but you just gotta keep pushing. Get used to the angles at which you can score and which are likely to miss. Understand how your players move, how they pass, and how they pick up passes.
Be unpredictable. I sometimes run with my Centre Backs into the centre of midfield. I make long runs and then a few short passes. I'll make crazy long balls into the heart of their defense.
And obviously, practice. Practice. Practice. ;D
There's more to it, but it should help. I don't bother with all the fancy tricks, that's for noobs who usually haven't grasped the basics. Once you've mastered them, you don't need to flick the ball around or whatever.
As for me, I play 4-1-2-1-2 and I don't let the opposition rest, even for a second. Constant pressure, lots of passing and goals driven in home.
