Not really sure on the headsets - further advice on these required.

Monitor is wall mountable, gone for spending a little more on peripherals than you might first be inclined to as if they are under heavy use you dont want cheap stuff that will break after a coupla months, everything in, just multiply it up by 4

My personal view is that theres no point skimping on the PSU. If theyre going to be used on a regular basis, you're going to need a good efficient supply unit. I like Corsairs, personally, but other people have different views. Both builds that have been suggested so far are nice builds, but I'd be inclined to go with a Corsair PSU.

Just a personal preference I suppose.

You've already got basically what you need. If you want 20" monitors, just go pick one - wall mounted and for short-term gaming use for many customers, they'll all be much of a muchness. Take either of the builds given, multiply by four, and pick whatever screens you want.

AMD are good enough for everyday use by dedicated gamers. They'll do for a café. The builds as given look excellent, though I'd use a bigger power supply than either by preference.

Absolutely - at this price point AMD are by far the best option. You get a fast quad core CPU - and it leaves enough money left in the budget to buy a fast graphics card.

and are these builds good enough

Both my build and the one 95thrifles did will work and run games well.

We do this a lot.

Antec high currents are manufactered by Seasonic, they are not a cheap made psu.
