You're right. Technologically, high-end PCs outstrip anything in the console world. This doesn't mean that they are better for gaming for the majority of gamers, however.
Unless you're a techy/enthusiast (read somebody on boards such as this), you won't have a high end PC hooked up to your TV and be playing in the lounge. I play games to chill out, often split screen with friends. You can't do this with a PC without bringing it into the living room, and working out a control system for three or four people. It's a hassle. This isn't the way that everybody games, but the less "techy" and more casual the gamer, the less likely they will be to want to sit at their desk to play.
Likewise, a game does not need to be insanely deep to be good. Hardcore PC gamers will disagree but again, I play games to relax. I don't want to spend a half hour pondering whether levelling up in a certain way will impact upon my desire to be a morally good warrior-mage with scanty clothing and a slight paunch. Again, I imagine that this is how the majority of gamers play games, and this reflects in sales of more casual console games. It does not mean that the game is worse if it is not as deep. Uncharted is a shallow game, but what it does it does exceptionally. Bioshock is a shallow game, but with an exceptional storyline which is why it is the great game that it is. Red Dead Redemption ditches a lot of the RPG elements from other Rockstar games which is why it is the game it is.
You may disagree with me. I know that for some people there is nothing more satisfying than considering how to level up, or how to plan their empire on a strategy game and that's fine. For these people games are competitive, and they want to "be the best". Most of these people will game on the PC for the deeper.
In short, it's a completely subjective question. It depends on what you want to get out of games. However, just because a game is less deep, it neither means that it is worse, and nor does it mean that it's for "thick consolites" who can't see that the PC ROXOR.
