It isn't her opinions, it's the schools policy which she has to abide by otherwise she can be reprimanded and even worse - be accused of inappropriate touching of the children.
She is not allowed to help a child undress, clean their private parts and then get dressed again even if there was spare clothes.
I don't think you're understanding this part.
Being a Mother and a decent human being her instinct is to help the child and it upsets her a lot when she can't.
You also don't know how many times at the dinner table I have heard the 'child soiled themselves' story and she is powerless.
It also doesn't help that her children are 'special' and are therefore more prone to soiling themselves.
I presume the wife thinks that the teacher shouldn't have been banned, and that the decision is completely wrong in that case is it?
As far as I know she doesn't know the story, if it didn't make the 6 o'clock news she wouldn't know.

And don't get me started on the school policy for how they deal with an asthma attack when the child has lost their inhaler and there isn't a spare one locked in the cupboard.
Go on then, several teachers just stood their powerless while the child had an attack and the only thing they could do was phone for the Paramedics.
Of course in that time the child could be dead but handing somebody elses inhaler would be considered assault (!).
In the end a little girl handed one to her.
