A few notes:
Case: Personally, I prefer the Antec P183 and the dual chamber setup is very nice for cable management. However, it is not Tri-SLI friendly if you ever wanted to go this way in the future. So, the Antec 902 is a nice alternative.

Windows: You can save a little bob if you decide you don't need BitLocker or Windows in 35 different languages. In which case you can get Windows 7 Professional for £114.98 or if you don't need domain level features, go for Home Premium and save a bit more. Check out the version comparisons here.

Keyboard/Mouse: This is purely for completeness of the Spec.

Crossfire 6970 when unlocked. Raid0 with 2x Vertex SSD, 8gb ram, 27.5 inch monitor with 1980x1200, got all the accessories and its total cost is £1,952.45
 
For that, 1000W PSU is overkill. It would be fine with a 750W supply. You could add a couple of upgraded fans for the H50.
 
Yeah im sure it would be fine on the 750w.

I'd be tempted myself to get the 1000w though. Leaves the room for expansion if needed, can pretty much guarantee you can use the same psu for future builds and with the budget the OP has i'm assuming there is a chance more hardware will be added in future, making the 1000w the obvious choice.
 
i do have a corsair 750w modular psu in current build i can salvage its only just over a year old i think. also got x-fi tit sound card. arethe xonar ones a lot better then this? Could do with some nice headphones as g/f complains of the noise :) and 24" screen is max size really. As i side toying with idea of nvidia 3d vision! But a lot of extra £££ for that :(

I Also have no clue about unlocking gpu and setting up a RAID array :S

Keep the PSU, it will cope with two GTX570 in a SLI setup.

Keep the X-FI, you wont notice the sound difference.

And a good SSD is so fast, that a RAID array is not needed.
