Ketchup with a sprinkling of naga chilli powder on mine.
Plain.
110g plain flour.
200ml milk, mixed with 75ml of water.
50 g of butter, melted.
2 Eggs
Sift the flour into a mixing bowl, do it from a height to get lots of air in there. Then make a well and crack 2 eggs into the middle. Start to mix. Slowly add the liquid whilst mixing. Mix mix mix, don't worry about lumps as they'll go away once the whisk gets to it and you add more liquid. Once all the liquid is in and it's a nice smooth batter, add the butter and whisk it up. Then get frying those pancakes!
I like artificial sweetener and lemon juice.
