New build advice needed. - GFX card dilemma

Hi guys, I'm new to this forum but I come seeking some advice about my current build. More specifically my current graphics card quandary.

I've had my current build set up and ready since January and initially I was holding out for the 69++ series of ATI cards, thing is most people are reporting horrible noise levels with the 6970/90.

My initial plan was to go with 2x 6970 but I also briefly flirted with the idea of getting the 6990.

I can't help feeling the dual card solution has advantages and for now, my intentions lie in this direction. Still I'm stuck here STILL waiting for a non-reference HD6970 some months after release and it's starting to annoy.

The noise on these cards is a definite passion killer here, so my mind turns to a full water-cooling solution which frankly intimidates the hell out of me, it's a lot of work and risk. Still it's something that intrigues as it's not something I have tried before. But if so Where do I go for this? The sheer amount of plates/ connectors, pumps, tubes, random gubbins is a tad overwhelming, Ive no idea whats good and whats mediocre, I might have to pass on this unless I can find an exceptionally good kit to go with.

Lastly it's the monitors these ATI cards have Display Ports on them but for the life of me I cannot bloody find any at a respectable price, especially as I intend to buy 3 at a minimum of 1920x1200 resolution each.

I figure adapters will probably do the job but seriously what am I getting here? There seem to be a few around but am I buying female or male to female to male dvi cables here? Supplier information tends to fall a little short on what exactly the connectors are on the back of the card/monitor. Regardless, using adapters is something I'm not entirely comfortable with but the alternative is a little too spendy.

Tl;DR:

Hold out for non-ref 6970
Buy them now + after-market cooling or full on water cooling?
Display Port adapters to DVI or Display port Compatible monitors (min 1920x1200res) @ ~£200

Any advice will be greatly appreciated, thanks in advance.

The rig so far:
CM Scout
AMD Phenom II X6 1090T BE
Asus Crosshair IV Formula
8GB Corsair Dominator 1600 C7

This is a 6970 with a non reference cooler ?
asus ati radeon hd 6970 directcu ii

alternatively if you have the cash buy a vanilla 6970 and add this accelero-xtreme-plus
Overclockers do not sell them but if you search the net they are about £50 plus you have to buy the fitting kit for the 6970 (VR001 about £5 or so) direct from Arctic.

I dabbled with water cooling a while ago and started off with a Swiftech Kit just to see how it all fitted together then when I was confident I added extra bits and replaced items with larger specs such as bigger radiators. Its not that much of a risk if you are just careful with making sure you have no leaks and test the loop before actually fitting it properly. Even then small leaks can not be that hazardous if you use the right liquid. You could always be really lazy and use one of the Corsair Hydro kits. Unfortunately OCUK don't seem to sell the more "specialised" kits anymore but if you search around other retailers do.

From what I gather correct me if I am wrong but display port does not offer much more over DVI so why bother ?

Because even with the one you linked me it has Display Connectors: 2 Dual-Link DVI-I, 1 HDMI & 2x Mini-DisplayPort, which is a bit of an arse if you ask me as I want a 3 monitor set up.

Oh and btw that card is fewkin HENCH, are 2 going to fit???
