Right im bored of my usual diet. So ive got the afternoon off and am willing to shop or order in...my post code is SO53 if your looking at restaurants....

Ill eat anything that is full of flavour so no stupidly hot curries as I wont eat it as I wont enjoy it....everything else is fair game.



So OCUK what shall I eat for my main meal tonight?


could be a fun regular thread with people being suggested meals.

Home made beef burger topped with a fried Spam (or lean tinned ham) fritter (instead of bacon), a slice of Swiss cheese, lettuce and tomato.

On the side, a chilli relish dip with Sautéed sweet potato slices topped with a pinch of chopped basil and onion.

All you have limiting you is no stupidly hot food, and the best you can come up with is a bit of mince with spam on?

Southern spiced sausage (or chicken, bacon, whatever). I love this cos its pretty versitile. Bascually your making a rich flavoured, slightly spicey thick sauce which can be easily adjusted depending on taste. And its all done in one pan.

Recipie for 4 people
2/3 sausages per person.
pack of peppers (1 red, 1 yellow, one green)
one onion
1-2 fresh red chillies (one if your not into spicy food)
1 clove of garlic
2 sticks of celery (optional)
A fair few sprigs of thyme
2-3 tsp flour
1 tsp cider vinegar
1 tsp paprika
1 tsp cayenne chilli pepper (might want to half this)
Can of tinned tomatoes
500ml chicken stock.
4 portions of rice
Olive oil

This dish is to be cooked in one pan so make sure its not a weedy effort.

Tsp - tablespoon :)

Chop peppers onoins and celery loosly. De-seed and chop chillis. Finely chop thyme. Peel and crush garlic clove.

Brown off your sausages (chicken whatever) then leave to one side. Should be left with about 4tsp oil in pan, if not add more.

Add peppers, onion, and celery to pan and simmer for 10 mins. Add garlic, chilli, thyme and spices and cook for about 3/4 mins. Add cider vinegar, flour and cook for one min (keep it moving. Then add tomatoes and chicken stock. Give it a good mix, then add your sausages back in. Give it a good mix then simmer for 15 mins (now is a good time to get the rice cooking)

Add / remove chillis and cayenne chilli pepper for hotness preference.

Get the Nachos kits you can buy from any supermarket. Then get a tub of Guacamole+ Sour Cream and about 800g of good quality mince( should be enough for 2) sprinkle some good grated cheese over the mince. Lovely Jubbly
 
Well, if I had my way it'd be covered in hot sauce too, but nyeh nyeah! :D:p



Dont get me wrong I like heat and spice, but I prefer flavour. I love piri piri sauce and a good hot jalfrezi. but not a thal, if that makes sense.

That sounds awesome and definately gonna give it a try tonight! But did you only mean 1tsp of cider vinegar? Same goes for the flour - only 2-3 tsp? Assume you actually meant tbsp (tablespoons) for both of these? :confused:

Sorry yes - should have made that clear - all measurements are in TABLEspoons :)

And yes its all you need. Any more than 3 tsp of flour and its going to go really thick. When you add everything in its going to look watery, but give it a good mix then leave it to simmer. Its when its simmering that it will then thicken up and turn into a proper sauce :)
