Talking from experience. It all sounds nice and doable. But really it isn't. It's a money pit and requires very technical skills, plenty of covered space and tools.
God knows how much I spent in the first couple of years and since then it's just be sat there doing nothing. You need the storage space to strip it down. So your talking like a double garage. Minimum single garage just to store the bits. You are then looking t thousands to strip the pain and rust of, weld it up and then getting it painted. Then countless more thousands to rebuild it.
As others have said shipping is stupidly expensive and you can pay more for shipping than you do the parts.

If you want one, save the money and buy one that is rust free and MOTd, then you can just work on sub systems when you can.
 
All depends how seriously your dad is up for getting involved, and more importantly bank of dad, and assets such as garage of dad. :)
