Last minute advice

I play games on 1 monitor and have something else on the 2nd, movies, TV ect.

Than that shouldn't be a problem.

Playing games on 1 monitor is fine and with the right setup (an AMD Eyefinity card or SLI Nvidia cards) there's more support for 3 screen gaming.

Playing games on 2 screens is a bit more complicated I think.

You just have to decide what card you're going to buy now.
 
Ive decided to push the boat out and go for a HD 6970 2GB

If you're planning on spending HD 6970 money (£280) I'd consider a GTX 570. Overall it's a bit faster card and 2GB of VRAM isn't relevant at 1920x1080.

Certainly don't get a HD 6970 over a HD 6950. You can get a HD 6950 for around £200 and it isn't much slower than a HD 6970.
