If you use iTunes as a player, then I suggest ripping as either WAV or Apple Lossless. These are both lossless, as is flac.

Apple Lossless has significantly smaller file sizes, but is Apple's own format.
WAV is compatible with pretty much everything, big file sizes, carries no metadata such as artist, song name which is a pretty big - (iTunes keeps track of the metadata but its not stored in the files).
FLAC cannot be played in iTunes, and needs a codec to work with Windows Media Player.

Personally I use WAV with iTunes as it means I can listen to the files in other non-Apple software. Note, you can convert between WAV, Apple Lossless and FLAC with no quality loss, so any one will do!

In any case if you want to rip at top quality you will have to convert them to mp3's for devices with small hard drives. WAV is the only format which you can be sure to work on all small media players in cars and such.

My favorite conversion software is xrecode II, nice interface and fast as it converts 1 song per cpu core.
