im looking for some easy to make marinades for chicken.

ive got lots of chicken thigh and rice so im doing marinaded chicken and rice.

im about to run out of my big bottle of nandos bbq and thought it would be good to make my own.

any suggestions?

a bbq recipe would be good but open to others.

This is a great recipe. 24 hour marinade for best results. Inspired by the Queen of curries, Madhur Jaffrey.

Tandoori-style Chicken.

Cut slits into your chicken and sprinkle with salt and rub in lemon juice. leave for 20 minutes whilst making the marinade (very important).

Blend into paste -

1/2 medium onion
3 cloves of garlic
3 inch piece of ginger
1/2 teaspoon of cayenne pepper
1 teaspoon of garam masala
2 teaspoons of ground cumin
250ml natural yoghurt

Put it in a ziplock bag or bowl with the chicken, cover and leave for 24 hours in the fridge. Stir every now and then.

Remove the chicken from the marinade, brush with a little oil and cook in the oven on a tray at 240'c for 15 minutes. Chicken in single layers. You can sprinkle fresh mint on it before it goes in as well, I find it makes it go from tasting amazing to absolutely sublime.

I love this dish.

My Mum makes an awesome BBQ style marinade for chicken legs and thighs that is super easy.

It's basically just crushed garlic, soy sauce, tomato ketchup and a little brown sugar to sweeten. It sounds basic but it is so good. My Mum usually marinades the chicken for a few hours before cooking on a high heat in the oven.

Toast and grind the following in a dry pan:

1/2 of 1 nutmeg
1 cinnamon stick
1 tablespoon coriander seeds
1 teaspoon cloves, whole
1 teaspoon black peppercorns

In a blender or food processor puree:

1 bunch spring onions, chopped
1 med onion, roughly chop
2 to 3 Scotch Bonnet peppers (or whatever)
10 sprigs thyme, leaves picked
10 garlic cloves
1 teaspoon allspice

Combine all of the above in a bowl and stir in the following:

1/2 cup fresh lime juice or white vinegar
1 cup soy sauce
1/2 cup raw sugar

you can water it down with white rum if you need it thinner

Kansas style BBQ sauce

This sauce works with everything pretty much... it's particularly suited to ribs though. The recipes measurements are in "parts". If you want to make a small amount, use a tablespoon. If you want to make more, double everything or use a measuring cup. As long as you measure everything (except the spices) with the same thing, you can't go wrong.



8 - Tomato Ketchup

2 - American Mustard (think French's yellow mustard, like the stuff you have on hot dogs)

2 - Cider Vinegar (White vinegar should work pretty well. As would red or white wine vinegar but cider vinegar is best)

1½ - Worcestershire sauce

1 - Lemon juice (it doesn't matter if it's from a bottle, in fact it's probably better in this case as fresh lemon juice may be too overpowering)

1 - Steak sauce (such as HP brown sauce)

1 - Molasses or black treacle

1 - Honey

4 - Brown sugar

? - Salt (to taste, I recommend Celery salt if you've got it but it doesn't really matter)

? - Hot sauce (to taste, don't use anything too vinegary)

? - Chili powder (same as above minus the bit about vinegar)

? - Black pepper (to taste)


Mix all of the above together and adjust the seasoning if desired.

1 - Onion, finely chopped (red or white, the colour doesn't matter really)

4 - Garlic cloves, crushed.



1. In a saucepan, sweat the onion on a low heat until it becomes becomes soft and starts to caramelize.
2. Add the crushed Garlic to the pan and cook for thirty second to a minute, just to take away it's raw taste.
3. Pour in the sauce mixture and bring to a simmer. Reduce by a third.
4. Leave to cool before marinating.

I used ancho chilli powder and smoked paprika.
Can't stop eating it :D

I've been marinating some chicken in a jerk marinate I did for 2 days... should be nice tonight!

Also decided to make some hot wings so made up a marinade... it was:

onion

garlic

3 scotch bonnets

tomato puree

vinegar

oil

sugar

All blended up. Has a hell of a kick. Hope it makes tasty wings... :p

I am sharing a luxurious and revolutionary marinade recipe for chicken. You should try it.

Ingredients:

* Good splurge Lea and Perrins 5 Minute Marinade
* Generous slug Mrs Balls Chutney
* generous spray Worcestershire sauce
* Good sprinkle Soy Sauce
* Handful of fresh chopped basil
* A good sprinkle of Chilli flakes
* Juice of one Lime
* Salt and Pepper

Method:

Mix all the ingredients in a bowl. Adding as much as you need to coat and cover the chicken you're going to BBQ.

Leave the meat as long as you can, a few hours is ok. Overnight is better.
