Heinz's mayo is soooooo much nicer than hellmann's

Mayo = Rank

Never touch the stuff, Fruity sauce for chippies!

that or if I've got some mint sauce = Insanely nice chips.

This is a subject I feel very strongly about. Particularly where tuna is involved.

Light mayo - NO!

Tuna mayo MUST be made with Hellmanns original full fat. This point is not open for discussion.

The tuna must be in sunflower oil. Tuna with either spring water or brine dilutes the mayo, and subsequently does not mix correctly and destroys the texture, as does adding cucumber (die!), or sweetcorn (DIE IN A FIRE!).

The following are the only appropriate additions to a tuna mayo sandwich (which incidentally should only be made with real, salted butter, never margarine):

- 3-5 twists of a grinder containing black or mixed peppercorns, white pepper is unacceptable, as is pre-ground "pepper powder".

- Grated Pilgrim's Choice or Cathedral City mature cheddar - this can be coupled with the pepper mentioned above.

- Encona Hot Pepper sauce. This should not be coupled with either the cheese or pepper mentioned above.

Where tuna mayo is served with baked potato, allowances can be made for both baked beans and other cheeses.

Heinz mayo is the preferred choice where chips, fries and potato wedges are concerned, however in all other circumstances, Hellmanns should be issued as standard.

WRONG. (in parts)

Tuna has to be in spring water or the texture is wrong and I am open to discussion on cucumber but sweetcorn you can go and burn for all I care.

Also cheese with tuna mayo!? ARE YOU MAD!?!?!?

Spring water and mayo don't mix well, so you end up with sloppy goop - not good! Anything which destroys the sublime texture of the tuna mayo combination is an abomination!

I felt the same as you about the cheese/tuna mayo combo, then I had my eyes opened, but I cannot emphasise enough how important it is that it is a decent mature cheddar. Anything else turns a masterpiece into a thing of horror!
