How do you cook falafel?

I've looked at a few recipes but they seem to get mixed reviews so what's your recipe for cooking falafel?

Now obviously spice and herbs will be to your taste but hopefully ill get a basic recipe that works and I can go from there.

Also when eaten in wraps what's your favourite filling? How many different things does it work with?

I'm interested to hear people's thoughts on this as I've only managed to make semi-decent falafel once. There's a place in Rusholme (on the curry mile) called Falafel that makes amazing ones but I've never worked out their recipe.

The main tip I'd give is that when you first mix in the water the mixture should be extremely wet. You'll be pretty shocked by how much it soaks up 5 minutes later.
 
Will give that one a whirl, seems too easy to be true though!

I dont have a blender so if I finely dice all the ingredients and mash them together with the chickpeas that'll work ok?
 
Nom nom nom, falafel!

Tried the recipe but think I need to add more herbs and spices as it was a bit bland. Still good for a first attempt though.

Taken a shining to these usually and was going to ask if anyone had any decent recipes. But if anyone has any other recipes or modified that recipe, let us know.

Seems this thread has answered this.

Anyone tried freezing them? Does it work well?
Was thinking part frying them, then freezing and finishing off in oven. Like they do for oven chips.
 
Never tried freezing them.

I found they were much nicer if you put all the spices and herbs in a little oil to make a paste, leave this overnight or for 24 hours before using.

I also added more chilli.
 
I cook falafel using lentils vertes opposed to the 'usual' chickpeas and enjoy the tasty, tasty results:

- Boil the lentils for 10 minutes then simmer for 25. (80gms of dry lentils transformed into enough to feed 3 hungry bellies and provide 2 with lunch today: I suggest less than this :p )

- Place lentils in a bowl with a finely chopped red onion, chili (variety to suit your heat preference), crushed garlic, an egg, harissa paste, salt & pepper.

- Use a hand blender to blitz up the mixture roughly (a fork / potato masher will do if you don't have a blender).

- Add flour and bring together with a fork until you have a moist, dough-like mixture.

- Flour your hands and form into little balls or quinnel with a pair of spoons if you prefer.

- Shallow/deep fry in hot veg.oil until dark golden (about 3 minutes for me).

- Serve in a large tortilla wrap with pickled red cabbage, caramelised onions, cous-cous, tahini & chili sauce.

Think I've had a tad too much caffeine today, totally misread the title as "How do you overclock falafel?"...

On a more serious note though, have never actually tried making my own falafels before, generally just buy a pack of them from ASDA and ovenbake them (and eat them along with some hummus and pita bread). Might have to try some of these recipes though.
