Ok, erm clubwise I can't really recommend anything as I'm into the metal scene, however if you're after R'n'B then you'll probably want to either head to one of the clubs in the Printworks or some of the bars on Deansgate perhaps. I would have said Opus in the Printworks but I believe it's been shut down now.
To be fair you could probably start out on Deansgate, find a nice bar you like and then ask the barstaff/other patrons if they know of anywhere to go on a Wednesday night.

OMG we are European's, to as it means that we like modern clubs, good restaurants and clothes from Paris

Same applies really. There's also an Indie/Dance/Hip Hop night on in 42nd street on a Thursday if that takes your fancy at all.

restaurant wise, I'd go to Albert's shed, on castlefield. Really nice.
